Apple and potato mash à la Gabi

Ingredients for 4 servings:

  • 800 g jacket potatoes, peeled
  • 200 ml milk, 3.5% fat, hot
  • 4 tsp butter
  • Salt
  • Nutmeg, freshly grated
  • 2 tsp rapeseed oil
  • 1 medium-sized onion(s), halved, cut into strips
  • 2 small red apples, 200 g
  • 4 tsp hazelnuts, chopped
  • white pepper, freshly ground
  • some parsley, flat, chopped

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Mash the still-hot potatoes, mix with milk and butter, season with salt and nutmeg, and keep warm. Do not peel the apples, but core them and cut them into thin slices. Heat the oil in a nonstick pan, fry the onion and apples, briefly toast the nuts, sprinkle with pepper and parsley over the mash, and serve.
