Ingredients for 1 servings:
- 300 g pumpkin flesh, grated
- 2 small apples
- 150 g butter
- 400 g flour
- 1 packet of baking powder
- 150 g sugar
- 1 packet of vanilla sugar
- 2 eggs
- 100 ml apple juice
- possibly grease for the mold
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour
Briefly bring the pumpkin flesh and apple juice to a boil. Meanwhile, combine the eggs, vanilla sugar, sugar, and butter. Stir in the pumpkin-apple juice mixture. Then add the flour and baking powder and mix to form a dough. Peel and slice the apples. Pour the batter into a greased or parchment-lined springform pan and arrange the apple slices on top. Bake the cake in a preheated oven at 180°C (top/bottom heat) for about 30 minutes. Do the toothpick test!
