Apple and quark pancakes

Ingredients for 4 servings:

  • 2 eggs
  • 50 g sugar
  • 500 g low-fat curd cheese
  • 1 tbsp lemon juice
  • 150 g flour
  • 1 pack of vanilla pudding powder
  • 1 apple, peeled and grated
  • lemon juice
  • n. B. Rum flavor
  • Clarified butter

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

with vanilla pudding

Beat the eggs and sugar until frothy. Fold in the quark, lemon juice, rum flavoring, flour, and custard powder. Finally, add the grated apple. Heat the oil in a pan (approx. heat 7 out of 9) and, using a tablespoon, drop generous amounts of the quark mixture into the pan, flattening slightly if necessary. Fry until golden brown on both sides. I usually make about 8 pancakes. For a while longer, the pancakes can be kept warm in the oven at around 80-100 degrees Celsius. They go great with apple compote and cinnamon. Sometimes we eat them simply with jam.
