Apple and sage sauce

Ingredients for 4 servings:

  • 2 apples (cooking apples)
  • some water
  • 1 tbsp sugar
  • 1 pinch(s) pepper, black
  • 1 tsp sage, chopped
  • possibly salt

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

delicious sauce for duck or roast pork

Peel and core the apples, then slice them. Place the apples in a saucepan with a little water and cook over medium heat, stirring occasionally. Add the sugar and pepper and season to taste. Purée the mixture with a hand blender or through a sieve, then add the chopped sage to taste. Salt isn’t really needed, but you can add more if you like. Cover and let the sauce stand for about 5 minutes before serving to allow it to infuse. It’s a great accompaniment to duck or roast pork.
