Apple and salmon ragout

Ingredients for 4 servings:

  • 800 g salmon fillet(s), diced 2 cm
  • salt and pepper
  • 1 lemon(s), juice
  • 2 apples
  • 2 tbsp shallot(s), finely chopped
  • 1 tbsp butter
  • 200 ml sweet cream
  • 1 bunch of chives, cut into rolls

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Season the salmon cubes with salt, pepper, and lemon juice, and let them simmer briefly. Meanwhile, sauté finely chopped shallots in butter. Add the apple cubes and sauté, then season with salt and pepper. Finally, stir in the cream. Drain the salmon cubes, fry briefly in hot butter, and add to the apple sauce. Serve sprinkled with chives. Serve with rice or pasta.
