Apple and spelt pan

Ingredients for 2 servings:

  • 125 g spelt
  • 2 tbsp butter
  • 4 Medjool dates
  • 2 handfuls of almonds
  • 1 cinnamon stick(s)
  • 2 apples
  • ½ lemon(s)
  • 2 tbsp flaxseed
  • 2 tbsp puffed amaranth
  • n. B. Honey

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Cook the spelt according to the package instructions. Melt the butter in a saucepan. Pit the dates and cut into pieces. Add the almonds and dates to the pan along with the cinnamon stick and sauté for about 5 minutes. In the meantime, chop the apples into small pieces and squeeze the lemon. Add the apples and about half of the lemon juice with a little water and sauté for another 10 minutes. Turn off the heat and add the remaining lemon juice. Stir in the spelt along with the flaxseed and amaranth and serve the apple and spelt dish. Sweeten the dish with honey if desired. Tip: If you sauté the apples a little longer, about 15-20 minutes, they absorb even more of the cinnamon flavor and the whole thing tastes very similar to an apple strudel filling. You don’t usually need any more honey. If you sauté for a shorter time, the apples stay crisper. So just experiment and see what tastes better.
