Ingredients for 1 servings:

  • 1 egg(s), size M
  • 25 g bell pepper(s), green
  • n. B. salt and pepper, white
  • 1 pinch of green curry paste

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 18 minutes

With green pepper

Separate the egg and let the yolk slide into a cup or small bowl, keeping it whole. Pour the egg white into a mixing bowl. Deseed and finely chop the measured piece of bell pepper, and add it to the egg white along with the curry paste. Blend everything with a hand blender until a light green mixture forms. Season to taste with the spices specified or to your liking. Heat oil in a small pan and pour in the colored egg white. Fry over medium heat. When the egg white begins to set, carefully place the yolk from the cup onto the mixture and continue frying until the mixture reaches the desired consistency. Arrange on a plate, garnish, and serve.
