Quickly knead all the shortcrust pastry ingredients together and form into a ball. Wrap in cling film and let rest in the refrigerator for 1 hour. Peel and core the apples, and quarter/eighth them. Roll out the tart dough and place it in a 26cm (10″) tin. Top with the apple pieces and sprinkle with cinnamon sugar. Bake in a preheated oven at 180°C (top and bottom heat) for 25 minutes. Mix the sour cream with the eggs, honey, and vanilla. Remove the tart from the oven, sprinkle with chopped walnuts, pour the glaze over it, and bake for another 25 minutes. For dessert, serve lukewarm with a scoop of vanilla ice cream.
