Apple-banana jam with a Christmas feeling

Ingredients for 3 servings:

  • 3 large apples
  • 1 small banana(s), ripe
  • 2 speculatius cookies (spiced)
  • some water
  • 1 tsp cinnamon powder
  • ½ lemon(s), juice
  • 2 packets of vanilla sugar
  • 2 tsp pudding (vanilla)
  • 250 g gelling sugar, 2:1

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 30 minutes

Peel the apples, remove the cores, cut into small cubes, and place in a saucepan. Peel the banana, cut into small cubes, and add to the apples. Add a little water to prevent it from burning. Cook until soft. Crumble the biscuits and add them to the fruit along with the vanilla sugar, cinnamon, and lemon juice, and bring back to a boil. Purée if desired. Finally, fold in the vanilla pudding. Then mix in the gelling sugar and bring to a rolling boil. Test the setting and pour into 3 small glasses.
