Ingredients for 1 servings:

  • 750 g apples, grated
  • 150 g sugar
  • 100 g raisins
  • 400 g flour
  • 2 tbsp rum
  • 125 g hazelnuts, roughly chopped
  • 1 tbsp cocoa powder
  • 1 ½ packets of baking powder
  • 1 pack of gingerbread spice
  • Fat for the mold
  • e.g. hazelnuts, chopped, or hazelnut brittle for the baking dish

Working time approx. 40 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 40 minutes

Peel the apples, remove the cores, and coarsely grate them. Combine the sugar, raisins, and rum and let it sit for a while. Combine the flour, baking powder, hazelnuts, cocoa powder, and gingerbread spice. Add the grated apples and raisins and knead. Pour the batter into a greased loaf pan sprinkled with hazelnuts or hazelnut brittle and smooth it out. Preheat oven to 160°C fan/convection oven or 170°C conventional oven. Bake for about 1 hour.
