Apple cake made from yogurt batter with maple syrup

Ingredients for 1 servings:

  • 4 apples
  • 4 eggs
  • 25 g vanilla sugar
  • 120 g sugar
  • 160 g butter
  • ½ lemon(s), juice and zest
  • 150 g Greek yogurt
  • 200 g flour
  • 2 tsp baking powder
  • 1 pinch of cinnamon
  • 3 tbsp maple syrup or honey
  • possibly powdered sugar

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour

Peel, core, and thinly slice the apples. Line a 26cm springform pan with baking paper and preheat the oven to 180°C. Separate the eggs. Beat the egg whites until stiff peaks form. Beat the egg yolks, vanilla sugar, and sugar until fluffy, then add the softened butter, lemon juice, zest, and yogurt. Sift in the flour, baking powder, and cinnamon and fold in. Finally, fold in the beaten egg whites. Pour the batter into the prepared pan and smooth it down. Lightly press in the apple slices. Bake the apple pie on the middle rack of the oven for 35-40 minutes. Brush with maple syrup while it’s still hot and let it cool in the pan. Dust the edges with powdered sugar, if desired.
