Apple cake with almond flakes topping

Ingredients for 1 servings:

  • 250 g butter, room temperature
  • 250 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 2 pinches of lemon peel
  • 4 large eggs (size L)
  • 200 g flour
  • 125 g cornstarch
  • 2 tsp baking powder
  • 1 kg apples, or other fruit
  • 100 g butter
  • 100 g sugar
  • 60 g almond sticks
  • 4 tbsp milk

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 5 minutes

Sheet apple cake with an almond butter topping

Peel, core, and slice the apples. Prepare the icing. Mix all ingredients together and bring to a boil. Then let it cool for about 15 minutes. In the meantime, you can mix the batter. Cream the butter, sugar, vanilla sugar, salt, and lemon zest until light and fluffy. Add the eggs one at a time and beat well. Mix the flour, cornstarch, and baking powder and fold in. Spread the batter evenly on a baking sheet. Top with the apple slices. Bake in a preheated oven on the middle rack for about 15 minutes at about 200°C (every oven heats differently, so check your own oven’s temperature!). Then spread the icing evenly over the cake and bake for another 15 minutes.
