Apple cake with marzipan icing

Ingredients for 1 servings:

  • 1 kg apples
  • 2 tbsp lemon juice
  • 300 g flour
  • 130 g sugar
  • 1 packet of vanilla sugar
  • 165 g butter
  • 250 ml milk
  • 20 g pudding powder
  • 75 g sugar
  • 1 packet of vanilla sugar
  • 130 g marzipan paste
  • 2 large eggs

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

for a 26 cm springform pan

Peel and core the apples, and cut into thin wedges. Toss in a bowl with lemon juice and set aside. Mix all the ingredients for the batter together until a crumbly consistency is reached. Pour into a 26 cm springform pan and press firmly, forming a 2-3 cm high rim. Arrange the apples on top. For the glaze, mix the custard powder with 3 tablespoons of milk, the sugar, and the vanilla sugar. Bring the remaining milk to a boil, then quickly stir in the custard mixture. Cook for about 1 minute, stirring constantly. Then stir in the marzipan until dissolved. Remove from the heat and let cool. When the mixture is lukewarm, stir in the eggs and pour everything over the apples, smoothing it down. Bake in a preheated oven at 200°C for about 45-55 minutes.
