Apple cake with meringue

Ingredients for 1 servings:

  • 3 eggs
  • 100 g butter
  • 125 g sugar
  • 1 pinch of salt
  • 125 g flour
  • 2 tsp, leveled baking powder
  • 6 tbsp milk
  • 750 g apples
  • 1 lemon(s), the juice
  • ¼ liter apple juice
  • 1 pkt. pudding powder, vanilla flavor
  • 250 g whipped cream
  • 250 g sour cream
  • 2 tbsp vanilla sugar
  • 3 egg whites
  • 100 g sugar

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Preparation of the dough: Beat the butter and sugar until light and fluffy. Gradually add the eggs and beat well. Add the milk and beat. Combine the flour, baking powder and salt and mix with the buttercream. Place the mixture on a baking tray lined with baking paper. Preparation of the topping: Peel and halve the apples and remove the cores. Drizzle with lemon juice. Spread the apples on the dough. Boil down the apple juice, mix the vanilla pudding and add it to the dough and beat. As soon as the mixture has thickened, remove from the oven and let it cool. Whip the cream until stiff and mix with the sour cream, vanilla sugar and pudding mixture. Spread this cream on the apples. Bake the whole thing in a preheated oven at 180 degrees Celsius for about 30 minutes. Meanwhile, beat the egg whites until stiff, sprinkle in the sugar and continue beating until firm and sticky. Remove the baking tray, spread the meringue over the meringue and bake for another 10 minutes.
