Ingredients for 1 servings:
- 4 egg yolks
- some vanilla
- 1 pinch of salt
- 150 g butter
- 150 g powdered sugar
- 400 g wheat flour
- 1 tbsp milk
- 3 apples
- some lemon juice
- some vanilla
- 1 tbsp sugar, brown

Makes about 30 delicious autumn cookies, egg yolks
First, mix the egg yolks with butter, powdered sugar, vanilla, and salt (do not foam!), then knead in the flour and milk. The finished dough should now be rolled out between two sheets of plastic wrap or a cut-open freezer bag to a thickness of about 0.3 cm. For even results, roll the roll along two equally thick pieces of wood (0.3 cm), rulers, or something similar. Let the dough cool. In the meantime, preheat the oven to 200°C (top/bottom heat) and prepare the filling: chop the apples and microwave them with lemon juice, vanilla, and brown sugar. They should not completely melt into applesauce, but remain slightly chunky. Take the dough out of the refrigerator or freezer and cut out two circles each using a 5-7 cm wide ring. Place one on a baking sheet lined with baking paper and top with a teaspoon of apple compote. Now place the other cookie on top and press the edges together firmly, perhaps with a fork. Continue this process until all the cookies are used up. Then bake the cookies in the oven for about 14 minutes.
