Apple – celery – salad with cherry tomatoes

Ingredients for 10 servings:

  • 5 apples
  • 1 celery or leek
  • 500 g cherry tomatoes
  • 1 bunch of spring onions
  • 2 bunches of chives
  • 100 ml apple cider vinegar
  • 150 ml oil (sunflower oil)
  • 1 tbsp maple syrup
  • ½ tsp salt
  • ½ tsp pepper

Peel and core the apples, and cut into thin slices or cubes. Then trim the celery root, wash each stalk, and finely dice it. Wash and halve the cherry tomatoes. Finely slice the spring onions and rinse them in cold water. Place all of the prepared ingredients in a bowl and stir in the finely sliced ​​chives. For the dressing, mix together the apple cider vinegar, maple syrup, salt, and pepper until the salt has dissolved. Add the oil and mix well. Fold the dressing into the salad, cover, and let it sit for half an hour. Season to taste and serve. Leeks can also be used in place of the celery. Cut them into thin strips, briefly blanch them in boiling, salted water, and then refreshed in cold water before adding them to the salad. Tastes delicious in summer, especially when grilled.
