Ingredients for 1 servings:
- 3 apples
- 150 g flour
- 3 tbsp almonds, ground
- 1 tsp baking powder
- 100 g margarine or butter
- 40 g brown sugar
- 60 g cane sugar
- some milk
- 2 packets of vanilla sugar
- 2 tbsp vanilla pudding powder
- 200 g quark
- 2 eggs, separate
- 1 pinch of cinnamon
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour
approx. 12 muffins
First, mix the flour with the almonds and baking powder. Melt the margarine and beat it with the brown sugar until fluffy. Add the flour mixture and mix everything until crumbly. Take 2/3 of the mixture (set the rest aside) and mix it with a little milk to make the batter a little smoother. Divide the batter evenly among 12 muffin tins and press down firmly. Peel the apples and cut them into small cubes. Sauté the pieces in water or lemon juice, depending on your taste. When the apples are soft, drain the water and divide the cubes among the muffins. For the cream, mix the quark, vanilla sugar, egg yolks, pudding powder, sugar and cinnamon. Beat the egg whites until stiff and fold into the mixture. Divide the cheese cream among the 12 cases. Finally, crumble the remaining third of the batter over the cream. Bake the muffins at 180°C for approx. 20-25 minutes until golden brown.
