Apple cheesecake with crumble

Ingredients for 1 servings:

  • 100 g sugar
  • 200 g butter, cold
  • 300 g flour
  • 1 egg(s)
  • 500 g quark
  • 3 eggs
  • 50 g flour
  • 130 g butter
  • 125 g sugar
  • 2 tbsp vanilla sugar
  • ½ lemon(s)
  • 400 g apples, finely chopped
  • 180 g flour
  • 100 g sugar
  • 100 g butter

Instructions

Working time approx. 40 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 2 hours 10 minutes

Quickly knead the ingredients for the shortcrust pastry together, wrap in cling film, and refrigerate for 1/2 hour. For the crumble, put the butter, sugar, and flour in a bowl and mix with a dough hook until crumbles form. Refrigerate the crumble until needed. For the topping, beat the butter with the sugar and vanilla sugar until soft. Add the eggs. Add the quark, the juice of half a lemon, and the flour. Press the dough into a 26 cm springform pan. Spoon the quark mixture onto the cake and scatter the apple pieces over it. Lightly press the apple pieces into the quark mixture. Sprinkle the crumble over the cake. Preheat the oven to 170 °C and bake the cake for about 60 minutes.
