Apple Chutney with oriental Touch
The perfect apple chutney with oriental touch recipe with a picture and simple step-by-step instructions.
- 150 g Caramel syrup with a note of coffee (see link at the end of the recipe)
- 600 g Apples peeled and pitted
- 1 Organic lemon juice and zest
- 60 g Pitted dates
- 100 g Candied pineapple
- 2 Figs fresh
- 40 g Orange peel
- 25 g Currants
- 20 g Pine nuts
- 10 g Pistachio nuts
- 250 ml Orange juice
- 1 tbsp Grated ginger
- 0,5 tsp Cardamom
- 1 tsp Cinnamon blossoms or 1/2 stick
- 4 tbsp Balsamic white, mild
- Wash the lemon, dry it, rub off the peel, keep it ready and then squeeze the lemon. Cut the peeled, pitted apples (then 600 g) into approx. 5 cm cubes, place in a bowl, mix with the lemon juice and leave to steep. Cut the dates and pineapple into slightly smaller cubes. Quarter or eighth figs depending on size (mine from the garden were quite small). Grate ginger.
- Heat the syrup in a larger saucepan slowly and not at the highest temperature until it puffs. Then add the apples including juice, dates, pineapple, figs, orange peel, currants, pine and pistachio nuts and caramelize lightly. Deglaze with the orange juice, stir in the ginger, cardamom and cinnamon blossoms or sticks, turn the heat down a little and let everything simmer gently with the pot open until most of the liquid has boiled off and the rest is slightly creamy. This can take 30-35.
- If you want to preserve it, you can pour boiling water over 2 jam screw jars including lids, leave them in this way until they are filled and make them sterile. Please be careful when pouring out the boiling water. The hot chutney must then be filled up to the brim and the glasses screwed on. Like jam, it lasts for many months.
- I only poured it into a bowl because I wanted to keep using it right away and keep it in the refrigerator.
- A homemade syrup is not mandatory. I used one with a slight coffee note because I had it in stock. The normal caramel syrup from the supermarket is of course also possible. If you then want the light coffee taste, add a teaspoon of soluble coffee or espresso. …… or just leave it out.
