Apple Cider Ice Cream
The perfect apple cider ice cream recipe with a picture and simple step-by-step instructions.
- 300 g Freshly diced apple Boskoop
- 100 g Sugar
- 1 packet Vanilla sugar
- 4 tbsp Freshly squeezed lemon juice
- 18 cl Cider
- 340 ml Milk
- 60 ml Cream 35% fat
- 2 Pc. Egg yolk
- For the apple compote, first put the apples, half of the sugar, the vanilla sugar and the lemon juice in a saucepan. Now boil the whole thing up briefly and then steam it over a moderate heat for about 15 minutes. Finely puree the apple compote in a blender.
- Then bring the milk with the cream, the remaining sugar and the 2 egg yolks to the boil in another saucepan and then mix the milk with the pureed apples. Then you take the ice cream off the stove and cool it down in an ice water bath. Then put them in the refrigerator for an hour and let them cool down.
- Now put the mixture in the ice cream maker and let it stir for about 1.5 hours until the ice cream is creamy and tender. You add the cider pretty much at the end, just before the ice cream is ready.
