Ingredients

  • 1 Vanilla pod
  • 500 ml Milk
  • 125 g Sugar
  • 6 Egg yolk
  • 100 g Whipped cream

Apple Cake

  • 250 g Butter
  • 200 g Sugar
  • 3 Eggs
  • 1 pinch Salt
  • 200 g Flour
  • 50 g Food starch
  • 1 tsp Baking powder
  • 70 g Ground almonds
  • 750 g Tart apples
  • 40 g Flaked almonds

Instructions

  • For the ice cream, cut into the vanilla pod and scrape out the pulp. Then put the milk and half of the sugar in a saucepan and add the vanilla pod and pulp. Bring the vanilla milk to the boil, take it off the stove and let it steep for 15 minutes. Now mix the egg yolks and the remaining sugar together well, but do not beat until frothy. Bring the vanilla milk to the boil one more time. Slowly pour the milk into the sugar-egg mixture while stirring and then let it thicken in a hot water bath while stirring. Have the cold cream and a bowl with ice cubes ready! When the mass drips thickly from the spoon, it is ready.
  • Now immediately add the cold whipped cream and stir in. Immediately place the bowl with the ice cream on top of the ice cubes and stir everything cold. Then pour the cold ice cream mass through a fine sieve and place in the ice cream maker. Let the machine run until a firm, creamy ice cream has formed. Finally, put the ice cream in a freezer, cover and freeze until ready to serve.

Apple Cake

  • For the apple pie, mix the butter and sugar together well. Add the eggs and a pinch of salt. Then beat the dough until frothy. Now mix the baking powder, starch and flour and sift into the dough while stirring. Then add the ground almonds. Peel, core and slice the apples. Then put two thirds of the batter into the greased cake tin and layer the apples on top. Spread the remaining dough evenly over the top and sprinkle with the flaked almonds. Then bake the cake in the oven on the middle rack at 180 ° C for about 45 minutes until golden.
