Ingredients for 3 servings:
- 500g spaghetti
- 1 liter apple wine, tart
- 1 jar pesto, green (green sauce pesto)
- 1 tbsp, heaped sugar
- 1 salt and pepper

Bring the cider and sugar to a boil in a saucepan. Simmer the cider for 15 minutes over high heat. Leave the pan uncovered so that most of the alcohol can evaporate. Stir occasionally. Bring a pot of salted water to a boil. Cook the spaghetti in the salted water for 3 to 4 minutes. Drain and rinse with cold water. Now add the pasta to the cider. Reduce the heat and simmer for 5 to 6 minutes, stirring constantly, until the pasta has completely absorbed the cider. Mix the pesto with the spaghetti and serve immediately. Season with salt and pepper to taste. Tip: If you can’t find green sauce pesto, you can substitute it with a simple basil pesto. You can also enjoy the pasta on its own.
