Spaghetti with pecorino, mint and pine nuts

Ingredients for 4 servings:

  • 500 g pasta, spaghetti
  • 6 tbsp olive oil
  • 3 cloves garlic, finely chopped
  • 80 g pine nuts
  • 2 bunch mint, finely chopped
  • salt and pepper
  • 100 g cheese, finely grated Pecorino

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook spaghetti in plenty of salted water until al dente. Drain in a colander. Heat olive oil in a large pan. Brown the garlic and pine nuts. Add half of the mint and the pasta. Heat everything while tossing and season with salt and pepper. Mix in half of the cheese, then divide between plates. Sprinkle with the remaining cheese and mint to serve.
