Ingredients for 1 servings:
- 200 g flour
- 200 g sugar
- 3 tsp cinnamon
- 2 packets of baking powder
- 2 packets of vanilla sugar
- 5 large apples
- 1 shot of soy milk (soy drink)
- some lemon juice
- Oil or margarine for the mold

Vegan
Peel, core, and dice the apples. Sprinkle the apple cubes with lemon juice to prevent them from browning. Combine the sugar and vanilla sugar. Mix the baking powder with 8 tablespoons of flour and about 8 tablespoons of water (this will make the “egg substitute” in the cake). Add to the sugar and mix. Mix the remaining flour with the cinnamon, then add the sugar and egg substitute mixture and mix everything well. To make the batter more liquid, add the soy milk and stir again. Finally, fold in the apples. Pour the batter into the greased baking pan and bake in a preheated oven at 180°C for about one hour, until the cake is golden brown.
