Ingredients for 5 servings:
- 240 g white beans, equivalent to 1 can drained
- 1 banana(s)
- 150 g plant-based drink, soy or almond drink, etc.
- 2 tbsp lemon juice
- 2 tsp baking powder
- 120 g flour
- 1 pinch of salt
- Oil for baking

Drain the beans and puree with the banana, plant-based milk, and lemon juice. Combine the flour, baking powder, and salt. Add the wet ingredients to the flour mixture and mix to form a smooth batter. Heat the waffle iron and grease it with a little oil. Pour about 3 tablespoons of batter into the waffle iron for each waffle and bake at medium heat for about 5 minutes. Bake waffles one at a time until all the batter is used up. Re-grease the waffle iron before each waffle to prevent the waffles from sticking. Serve the finished waffles with fruit, nut butter, chocolate spread, powdered sugar, or applesauce, as desired. Approx. 150 kcal per waffle.
