For the crumble, sift the flour onto the worktop and sprinkle over the sugar. Add the butter in small pieces, the vanilla sugar, and about 1 teaspoon of cinnamon. Rub all ingredients between your hands until crumbly and refrigerate for 1/2 hour. While the crumble is resting, peel the apples, cut them into small cubes, and drizzle with lemon juice, if desired. For the dough, sift the flour with the baking powder. Crack the eggs into a small bowl and mix well. Beat the butter with the powdered sugar, vanilla sugar, salt, and lemon zest until fluffy. Gradually add the eggs. Alternately add the flour and milk. Spread the mixture evenly onto a greased and floured baking sheet. Spread the apples and crumble on top and bake for about 60 minutes in an oven preheated to 170°C (top/bottom heat). Let cool and cut into 12 pieces.
