Apple Clafoutis

The perfect apple clafoutis recipe with a picture and simple step-by-step instructions.

  • 2 sour Apples
  • 1 Lemon, the juice
  • 100 g Sugar
  • 6 Eggs
  • 300 ml Milk
  • 200 g Cream
  • 40 g Ground almonds
  • 1 Heaped tablespoons Flour
  • Butter
  • Powdered sugar
  1. Preheat the oven to 180 degrees (top and bottom heat). You can also bake with convection, then 160 degrees. With circulating air, the clafoutis becomes really airy and fluffy and when it is overheated, the clafoutis has a consistency similar to a creme bruleé – both have their charm. I decided on top and bottom heat. Butter a baking dish well.
  2. Mix the lemon juice with 50% sugar. Peel, core and dice the apples and mix with the lemon juice. Whip the eggs with the sugar, cream and milk. Stir in the flour and the ground almonds and finally go through the mass a few times with the magic wand.
  3. Now first put the apple cubes in the baking dish and pour the egg milk over it and put it in the oven for about 1 hour. Then serve warm and dust with powdered sugar.
