Apple-Cranberry Muffins

Ingredients for 12 servings:

  • 50 g butter
  • 1 egg(s)
  • 100 g sugar
  • 1 orange(s), peel
  • 125 ml orange juice, freshly squeezed
  • 140 g flour
  • 1 tsp baking powder
  • some baking soda
  • 1 tsp cinnamon
  • some nutmeg
  • some allspice, ground
  • some ginger, ground
  • Salt
  • 2 apples
  • 170 g cranberries, fresh
  • 50 g walnuts
  • Powdered sugar, for dusting

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat oven to 160°C and grease a muffin tin thoroughly or line it with paper baking cups. Crack the egg into a mixing bowl, add the softened butter, and beat until smooth. Add the sugar, orange zest, and orange juice and beat well. Combine the flour, baking powder, baking soda, cinnamon, nutmeg, allspice, ginger, and salt in a bowl. Peel and slice the apples. Pour the egg mixture into the flour mixture and mix well. Add the apples, cranberries, and walnuts and gently fold in. Pour the batter into the muffin tins and bake in the oven for about 25-30 minutes.
