Apple cream cake with quark-oil dough

Ingredients for 1 servings:

  • 300 g wheat flour
  • 3 tsp baking powder
  • 75 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 150 g low-fat curd cheese
  • 100 ml milk
  • 100 ml oil (sunflower oil)
  • 3 cups sour cream
  • 3 tbsp sugar
  • 10 apples, sour (e.g. Boskop, Cox Orange)
  • Grease for the tray

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Sheet cake

Mix the flour and baking powder in a mixing bowl. Add the remaining 6 dough ingredients and mix everything with a mixer (dough hook) first on the lowest speed, then on the highest speed, until you have a smooth dough (don’t overknead, or the dough will stick!). Then shape the dough into a log on a floured surface. Grease a baking tray. Roll out the dough on the baking tray. Peel and core the apples, and cut into quarters. Cut the quarters again and cover the dough with them. Bake in a preheated oven at 180°C (fan oven: about 160°C) on the middle rack for about 35 minutes. In the meantime, mix the sour cream with 3 tablespoons of sugar. Immediately after baking, spread the sour cream on the hot cake. Let it cool and cut into pieces.
