Apple Cream Roll

Ingredients
 

  • 4 Eggs
  • 150 g Sugar
  • 150 g Flour
  • 1 pinch Salt
  • 1 packet Vanilla sugar
  • 1 kg Apples
  • 1 Lemon juice
  • 100 g Sugar
  • 1 tsp Cinnamon powder
  • 100 g Chopped hazelnuts
  • 50 g Raisins
  • 1 cups Cream, sweet

Instructions
 

  • Separate the eggs. Beat the egg white with a pinch of salt until stiff. Mix the egg yolks with the sugar until creamy. Put the egg whites on top of the egg yolk mixture. Sift the flour over it, fold in carefully. Spread the mixture on a baking sheet lined with baking paper. Bake about 15 at 180 degrees. Overturn on a tea towel sprinkled with sugar. Peel off the baking paper and roll it up with a tea towel. Cool down a little.
  • Peel the apples and remove the core, grate. Drizzle with lemon juice, mix with sugar and cinnamon, raisins and hazelnuts. Whip the cream until stiff. Roll up the roll and spread the cream on it. Spread the apple mixture on top, roll up the roll. Brush with cream to taste and garnish with apple pieces. Or, as in my case, dust with powdered sugar and decorate with nuts and chocolate shavings.
