Apple crumble cake

Ingredients for 12 servings:

  • 700 g apples
  • 100 ml lemon juice
  • 375 g flour
  • 175 g sugar
  • 250 g butter or margarine
  • 2 tbsp flour
  • 2 eggs
  • 1 packet of vanilla sugar
  • 250 g quark (low-fat quark)
  • 50 g sugar
  • 25 g semolina
  • powdered sugar

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Wash and quarter the apples and core them. Sauté the apples with lemon juice for about 3 minutes. Crumble dough: Mix the flour and sugar. Melt the fat and pour it over the apples. Using the dough hook on a hand mixer, mix the ingredients into crumbles. Sprinkle 2 tablespoons of flour over the crumbles and shake everything together in a bowl. Separate the eggs. Beat the egg whites and vanilla sugar until stiff. Mix the egg yolks, quark, sugar and semolina. Fold in the beaten egg whites. Grease the bottom of a springform pan (24cm diameter). Pour in half of the crumbles and press down firmly. Spread the apples first, then the quark on top. Sprinkle the remaining crumbles on top. Bake in a preheated oven on the first rack from the bottom at 160-180°C (fan oven) for about 50-55 minutes. Once cooled, sprinkle with powdered sugar.
