Apple dumplings with cinnamon and sugar

Ingredients for 4 servings:

  • 3 large eggs
  • 1 tsp salt
  • 1 tbsp sugar
  • ⅛ liter milk
  • 2 tbsp butter, melted
  • 400 g flour
  • 500 g apples (Boskoop or Cox Orange)
  • some butter for basting
  • some cinnamon sugar for sprinkling
  • salt water

Whisk the eggs with salt, sugar, milk, and melted butter. Add the flour and mix well. Peel the apples, quarter them, core them, and cut them into 1/2 cm pieces. Knead them into the dough. Bring plenty of salted water to a boil in a large pot. Using 2 tablespoons of the dough, scoop out smooth dumplings and form them. Let them simmer in an uncovered pot. Do not let them boil, or they will fall apart. After about 15 minutes, remove the dumplings with a slotted spoon and let them drain on a kitchen towel or paper towel. Place the dumplings in a preheated bowl. Brown the butter in a pan and spread it over the dumplings. Put the sugar and cinnamon mixture into a separate bowl and serve separately. This way everyone can sprinkle on as much of the mixture as they like.
