Plum dumplings

Ingredients for 4 servings:

  • 300 g jacket potatoes
  • 125 g flour
  • 20 g butter
  • 1 pinch of salt
  • 1 egg(s)
  • 8 plum(s), approx., quantity depends on the number of dumplings
  • sugar cubes

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Peel the potatoes and, while still warm, mash them through a potato ricer. When they are cold, sprinkle them with flour and make a well in the middle. Mix with butter, a pinch of salt and egg to form a dough, then let it rest for a short time. In the meantime, wash and pit the plums. Place a sugar cube into each plum. Shape the dough into thick rolls, cut evenly and roll into dumplings. Place a stuffed plum into each dumpling. Place in boiling water and let it cook for about 10 minutes. Do not boil. Cooked dumplings will float to the top, so don’t put too many in one pot. Place in a warmed bowl and pour over brown butter, then serve with sugar and cinnamon.
