Apple Foam Cake

Ingredients
 

For the dough:

  • 300 g Flour
  • 200 g Butter
  • 1 pinch Salt
  • 100 g Sugar
  • 1 piece Egg

For the filling:

  • 3 piece Eggs
  • 6 size Tart apples
  • 1 tsp Cinnamon powder
  • 3 piece Egg Whites
  • 2 tsp Freshly squeezed lemon juice
  • 200 g Sugar
  • 0,2 cl Orange liqueur
  • 50 g Powdered sugar

Instructions
 

  • Put all the ingredients for the dough in a bowl, knead and then refrigerate.
  • Peel five apples, cut into small pieces and mix with cinnamon. Roll out two thirds of the dough for the base, place in a springform pan (20 cm) and spread the apples on top. Roll out the remaining third of the dough for the lid, place on the apple filling and bake for 45 minutes at 180 degrees in a convection oven.
  • Now peel the last apple, cut it into pieces and boil it with a little water, lemon juice and sugar to make applesauce and then let it cool. Beat three egg whites with icing sugar until they are very stiff, carefully add the apple sauce spoon by spoon and season with orange liqueur.
  • Take the apple tart out of the oven as soon as it is lightly browned and spread the apple foam mixture on top. Put the cake back in the oven and bake for three to five minutes at 190 degrees.
