Ingredients for 1 servings:
- 2 eggs
- 40 g sugar
- 70 g flour
- 1 packet of vanilla pudding powder
- 1 tsp baking powder
- 1 pinch of salt
- 60 g quark (cottage cheese)
- some lemon juice
- 1 large apple or 2 smaller ones
- Clarified butter for frying
- Cinnamon sugar or powdered sugar

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
Makes about 9 pieces, enough for 2-3 people
This batch serves about 9 apple fritters, serving 2-3. Beat the eggs and sugar until frothy. Then stir in the flour mixed with the baking powder, pudding mix, salt, lemon juice, and curd cheese. Finally, coarsely grate the apple with the peel and fold it in. Heat the clarified butter in a non-stick pan, then immediately reduce the heat slightly. Add a heaped tablespoon of batter to each fritter and cook on both sides. Drain the finished apple fritters on kitchen paper and sprinkle with sugar/cinnamon or powdered sugar. Serve with fruit puree or pudding.
