Apple fritters in sesame coating

Ingredients for 4 servings:

  • 2 eggs, separated
  • ⅛ liter milk
  • 125 g flour (whole wheat)
  • Sea salt
  • 4 tbsp sugar (raw cane sugar)
  • 1 pinch(s) vanilla, ground
  • 150 g crème fraîche
  • 4 tbsp sesame seeds
  • 3 apples
  • Palm fat, for the pan

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Whisk the egg yolks with milk, add the flour, salt, sugar, and vanilla, and let it sit for about 20 minutes. Meanwhile, peel the apples, remove the cores (this is best done with an apple corer), and cut into 1.5-centimeter-thick rings. Fold the crème fraîche and the stiffly beaten egg whites into the batter, then stir in the sesame seeds. Dip the apple slices into the batter and fry in hot coconut oil until golden brown on both sides.
