Apple gingerbread compote with amaretto raisins

Ingredients for 3 servings:

  • 50 g raisins
  • 2 tbsp Amaretto
  • 5 m.-sized apples
  • 1 tsp oil
  • 125 ml water
  • 1 tbsp brown sugar
  • ½ tsp gingerbread spice

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

To make the apple compote, soak the raisins in Amaretto the day before. Wash, peel, core, and slice the apples. Sauté the apple slices in a pan with the oil. Add the water and Amaretto raisins to the apples and simmer for about 15 minutes. If the water has evaporated and the apples still have a bite, simply add a little more water and simmer for another 5 minutes. After cooking, the apple slices should still be visible. When the apples are the desired softness, add the brown sugar and gingerbread spice and fold in. Let the compote steep for about 1 hour. The compote is delicious with rice pudding or vanilla pudding.
