Ingredients for 4 servings:

  • 1 kg pear(s), small, firm
  • 500 ml red wine
  • 500 ml water
  • 500 g sugar
  • 1 stalk(s) cinnamon
  • 3 star anise
  • 2 grapefruit(s), the juice
  • 1 piece(s) ginger
  • some cloves

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash, peel, and core the pears. Pour the red wine into a large, shallow saucepan, add the water and sugar. Bring to a boil. Add the pears. Add the cinnamon stick, star anise, ginger, and cloves. Simmer over medium heat for 5 minutes. Remove the pears and place them in the jars. Pour over the strained hot syrup, topping up with hot water if necessary. Seal the jars tightly and sterilize for 20 minutes at 80°C.
