Apple – Horseradish

Ingredients for 1 servings:

  • 1 kg apples, sour
  • 150 g sugar
  • 1 tsp salt
  • 125 ml vinegar (honey vinegar or mild white wine vinegar)
  • 20 g horseradish, freshly grated

Peel, core, and dice the apples. Mix with the sugar and salt and let stand for about an hour until the fruit absorbs the water. Add the vinegar and bring to a boil, then reduce slowly over low heat. Don’t forget to stir regularly! In the meantime, peel the horseradish and grate it very finely. Once the apples have thickened, stir in the freshly grated horseradish. Season to taste with horseradish, salt, and/or sugar. While still hot, pour into jars and seal immediately. The apple and horseradish goes well with cold roasts, boiled beef, or smoked fish.
