Ingredients for 6 servings:

  • 6 small apples (e.g. Cox Orange)
  • 50 g almonds, sliced
  • 1 pinch of salt
  • 2 lemons, untreated, juice and zest
  • 1 tsp baking powder
  • 300 g flour
  • 250 g butter
  • 250 g icing sugar for the dough
  • 4 eggs
  • Egg white, for the glaze, a few drops

Grease 6 baking dishes (preferably stainless steel, 1/4 l capacity) and sprinkle with flaked almonds. Thinly grate the lemons and squeeze out the juice. Peel the apples and core them with a corer. Sprinkle the apples with a little lemon juice and set aside. Sift the flour and baking powder into a bowl. Beat the butter with salt, lemon zest, and 250g of powdered sugar with a mixer until light and fluffy, gradually adding the eggs. Then stir in the flour with the baking powder and 2 tablespoons of lemon juice. Divide the batter into 12 portions. Place a portion of batter into each dish, place an apple on top, cover each with a second portion of batter, and seal the batter around the apples. Place the dishes near the bottom of a rack and bake in a preheated oven at 150°C (300°F) for 35-40 minutes. Let cool in the dishes on a wire rack, then turn out (this keeps everything intact). Mix 150 g of icing sugar, 2 tablespoons of lemon juice and a little egg white to make a glaze and spread it over the apple fritters.
