Ingredients for 4 servings:

  • 4 apples, preferably Boskoop
  • 50 g almond flakes
  • 50 g raisins
  • 4 tsp apricot jam or honey
  • 1 pinch of cinnamon
  • margarine
  • 1 tbsp cornstarch
  • 1 egg yolk
  • ½ liter of milk
  • 20 g sugar
  • 1 tsp vanilla sugar

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 15 minutes

Wash the apples and core them. Mix the almonds, raisins, jam and cinnamon together and place a teaspoonful into the openings of the apples, then press in with the handle of a wooden spoon. Place the apples in a greased baking dish and place a knob of margarine on each apple. Bake in a preheated oven at 200°C (gas mark 3, fan oven 175°C) for approx. 25 minutes. For the sauce, mix the cornstarch and egg yolk in 2 tablespoons of cold milk. Bring the remaining milk to a boil with the sugar and vanilla sugar. Pour in the mixed cornstarch while stirring and let it boil briefly. Serve warm or cold with the hot apples.
