Ingredients for 4 servings:

  • 1.2 kg smoked pork (boneless), boned
  • 3 large onions, quartered
  • 1 kg apples, sour, quartered
  • 2 tsp caraway seeds
  • 2 tbsp fat for frying (e.g. Rama Culinesse)
  • 2 liters of gravy (gravy stock)
  • 1 cup sour cream
  • salt and pepper
  • 100 ml apple juice
  • Paprika powder

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

hearty, but very very sweet

Brown the smoked pork with the bones in the frying fat on all sides. Then add the onions and apples. Roast briefly, then deglaze with the meat juices. Add the caraway seeds and simmer over medium heat for about 60-70 minutes. At the end of the cooking time, remove the apples, onions, bones, and meat from the meat juices. Brush the smoked pork with apple juice and briefly broil it in the oven under the hot grill. Reduce the meat juices and season with salt, pepper, and paprika. Thicken with sour cream. Return the apples and onions to the sauce and serve. Mashed potatoes with sauerkraut go very well with this dish.
