Apple marzipan cake

Ingredients for 20 servings:

  • 350 g flour
  • 1 tsp baking powder
  • 170 g sugar
  • 1 tbsp vanilla sugar
  • 210 g butter
  • 1,500 g apples
  • 500 ml milk
  • 200 g marzipan
  • 80 g sugar
  • 200 ml whipped cream
  • 1 pkt. pudding powder, vanilla
  • 4 eggs
  • 1 pinch of salt
  • 1 lemon(s)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Combine flour, baking powder, sugar, vanilla sugar, and butter in crumbles. Spread evenly on a greased baking sheet and press down lightly. Squeeze the lemon. Peel, core, and slice the apples, mix with a little lemon juice, and spread over the dough. Heat the milk and dissolve the marzipan in it. Whisk the egg yolks with the sugar, cream, and pudding mix. Bring the milk to a boil, stir in the egg yolk mixture, and bring to a boil again briefly. Beat the egg whites with salt until stiff peaks form, then fold into the hot pudding mixture. Spread everything over the apples. Bake at 180°C (preheated) for about 45-50 minutes.
