Apple – Marzipan – Tiramisu

Ingredients for 4 servings:

  • 2 egg yolks
  • 100 ml espresso or coffee
  • 4 tbsp Amaretto
  • 1 pack of ladyfingers
  • 250 g marzipan paste
  • 250 g mascarpone
  • 250 g low-fat curd cheese
  • 2 small apples
  • 1 packet of vanilla sugar
  • Cocoa powder, for dusting

Instructions

Working time approx. 45 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 45 minutes

Winter variation of the popular classic

Peel, core, and dice the apples. Heat them together with the vanilla sugar in a small saucepan without adding liquid. Simmer for a few minutes, then drain the liquid. Make the cream from the mascarpone, quark, marzipan, and the two egg yolks. If the marzipan is difficult to mix, simply heat it briefly in the microwave. Place a layer of ladyfingers in a baking dish and drizzle with the espresso and amaretto mixture. Do not over-moisten. Then add a layer of quark and marzipan cream, then spread the apple mixture on top. Now add another layer of ladyfingers, followed by another layer of quark and marzipan cream. Refrigerate for at least 4 hours, preferably overnight. Sprinkle with cocoa powder before serving.
