Knead flour, baking powder, quark, milk, oil, sugar, and vanilla sugar into a smooth dough. Roll out on a floured surface to approximately 36 x 48 cm and cut into 12 x 12 cm squares. Mix the egg yolk with 1 tablespoon of water until smooth and brush over the muesli pockets. Sprinkle about half of the muesli pockets with sugar. Bake in a preheated oven (E: 175°C) for about 15 minutes. Remove from the oven and let cool on a wire rack. Mix the apple juice with the powdered sugar until smooth. Transfer to a freezer bag and cut off a corner. Decorate the unstuffed apple muesli pockets with icing.
