Ingredients for 20 servings:
- 120 ml juice (apple juice)
- 4 tbsp honey
- 100 g butter
- 2 apples
- 300 g flour (type 1050)
- 200 g oat flakes, fine
- ½ cube of fresh yeast (or 1 packet of dry yeast)
- 1 pinch of salt

as an afternoon snack for babies from 10 months and figure-conscious adults (when cravings occur)
Melt the butter, warm it with apple juice, and dissolve the honey in it. (I always do this in the microwave.) Mix the flour, oats, and yeast. Knead it with the apple juice, butter, and honey mixture and a pinch of salt until you have an elastic dough. Wash and peel the apples, cut them into small cubes, and knead them in. Cover and let the dough rise in a warm place for about 30 minutes (until it has doubled in size). Then knead the dough again by hand and form small rolls. Place them on a baking sheet lined with baking paper, leaving space between them. Let them rise in a warm oven for about 15 minutes (preheat the oven to 50°C, turn it off, and let the rolls rise in the off oven). Then remove them and increase the oven temperature to 200°C (top/bottom heat). Spray the rolls with water and bake on the middle rack for about 20 minutes – depending on the oven and the size of the rolls. Let them cool on a wire rack. I freeze the apple and oat rolls for my little daughter in advance and then defrost them briefly in the microwave when needed. This way, I always have a small afternoon snack for her and sometimes for myself at home. Depending on the child’s age and taste, you can also add raisins or other treats to the dough. Honey should not be given to children under 12 months old in its raw form. However, since the honey in this recipe is baked (and thus heated to a high temperature), these rolls can be served before their first birthday. If you still have concerns, simply replace the honey with sugar or wait until later. My daughter loves these rolls!
