Apple pancakes

Ingredients for 2 servings:

  • 5 eggs
  • 1 apple
  • 1 pinch of salt
  • Flour as needed
  • 1 shot of mineral water
  • 2 tbsp sugar
  • Milk as needed
  • applesauce
  • powdered sugar
  • Butter and oil

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Beat the eggs in a large bowl. Beat with about 2 tablespoons of sugar until frothy. Beat vigorously with enough flour to form a heavy, sticky mixture. Then stir in enough milk to form a slightly thick batter. The batter should flow easily from the ladle, but not be runny. Stir in a pinch of salt and a splash of mineral water. Let the batter rest for half an hour. Heat butter and a little oil in a medium-sized, non-stick frying pan. Peel the apple and cut it into thin slices. Add enough batter to the pan to reach a depth of about 2 cm. Let the apple pieces disappear into the batter. The temperature should be kept at medium heat the entire time. If the batter is still runny on top but already dark on the bottom, the heat is too high. The pancake can only be turned when it begins to set. Then finish baking, sprinkle with powdered sugar, and serve with a little applesauce, if desired. A little tip: it also tastes delicious with morello cherries.
