Apple pancakes, great-grandma's style

Ingredients for 4 servings:

  • 5 apples, crumbly
  • some butter
  • 250 g wheat flour
  • 5 egg yolks
  • some salt
  • 20 g sugar
  • 1 packet of vanilla sugar
  • 500 ml milk
  • 5 egg whites
  • 60 g fat, for frying
  • n. B. Sugar, for sprinkling

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel the apples, dice them, sauté them in a little butter and chill. Separate the eggs. Sift the flour into a bowl. Make a well in the centre and add the egg yolk, which has been beaten with salt, sugar, vanilla sugar and a little of the milk. Starting in the centre, mix the egg yolk and flour, gradually adding the remaining milk, making sure that there are no lumps. Then stir the cooled apples into the batter and finally carefully fold in the egg whites, which have been beaten to stiff peaks. Melt a little of the fat in a pan. Add the batter in 1 cm thick portions and fry the underside over medium heat until golden brown. Then tear the apple pancake into small pieces with two forks, turn them over frequently until well browned and serve sprinkled with sugar.
