Apple pancakes with berry and nut mix

Ingredients for 1 servings:

  • 100 g flour, type 405
  • 150 ml milk, 1.5%
  • 2 eggs
  • 1 tbsp sugar
  • 1 pinch of salt
  • 50 g berry and nut mix, ready-made product (Brazil nut, almond kernel, cranberry, walnut, raisins)
  • 310 g apples, variety according to your taste
  • 1 tbsp lemon juice, fresh
  • Fat, for the pan
  • 2 tbsp sugar
  • ½ tsp cinnamon

Instructions

Working time approx. 30 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 10 minutes

makes 3 thick or 4 thin pancakes

In a mixing bowl, combine flour and milk with a whisk until a smooth batter forms. Add eggs, sugar, and salt and mix well. Cover and let rest for 20 minutes. Grind the berry and nut mix in a mortar and pestle until the desired consistency is reached. Once rested, add to the batter. Peel, quarter, core, and dice the apples, and place them in a bowl. Drizzle with lemon juice, mix well, and stir the apples into the batter. Heat fat in a frying pan over medium heat and cook the pancakes one at a time to the desired thickness. Arrange on a plate, mix the sugar with the cinnamon, sprinkle over the pancakes, and serve.
