Ingredients for 1 servings:

  • 3 eggs, separated
  • 3 tbsp water
  • 1 pinch of salt
  • 90 g sugar
  • 60 g flour
  • 30 g cornstarch
  • 100 g hazelnuts, ground
  • ½ tsp baking powder
  • 400 g apple compote, with pieces from the jar
  • 1 pkt. Sauce powder, vanilla, without cooking
  • 250 g whipped cream
  • 1 point cream stiffener
  • 100 g dark chocolate shavings

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Beat the egg whites with the water and a pinch of salt until stiff. Gradually add the sugar and continue beating for about 3 minutes. Stir in the egg yolks. Mix the flour with the cornstarch and baking powder, sift, and fold into the egg mixture along with the ground hazelnuts. Pour into a 24 cm springform pan lined with baking paper, smooth the surface, and bake at 160°C (320°F) for about 25 minutes. Allow to cool. Mix the apple compote with the vanilla sauce powder. Spread on the base. Whip the cream with the cream stabilizer until stiff and spread over the compote. Chill the cake for about 2-3 hours. Sprinkle with the chocolate shavings before serving.
